NAC446.9468. Cleaning and sanitizing of surfaces.

  • The holder of a permit for the operation of a food establishment shall, at least daily, clean and sanitize the surfaces which may come into contact with food on a portable unit for service of food by using the sink with three compartments in the servicing depot or food establishment in which the portable unit is located. If the portable unit has an integral cleaning and sanitizing system built into the unit, it must be operated so that the surfaces which may come into contact with food are cleaned daily.
