  • A mobile unit must have a refrigerator which is large enough to store safely all potentially hazardous foods. The refrigerator must have at least one integral or permanently affixed indicating thermometer accurate to within plus or minus 2°F (1°C). Only metal or plastic racks may be used in the refrigerator.
